It can be useful for intuition to alter the curve smoothly by simply deforming it with the mouse, instead of preparing an equation or family of equations. Try to create areas of high or low curvature, or guess what the normals/tangents look like before turning them on.

This resource provides some nice functionality for multivariable calculus, including osculating circles and normal vectors along a curve. Some of these features would be particularly useful when discussing line integrals. There are also a huge number of features that would not be useful for multivariable calculus, but are fun to explore.
